माताओं घर में छौंक लगाती है तो १०० – १५० – २५० डिग्री तक तेल, घी गरम करती है, उसमे डालेगी मिर्च-मसाला कि छौंक लगायेगी | तो तेल- घी Poison हो जायेगा और जो छौंक लगाती है, मिर्च-मसाला उसका भी विटामिन का नाश हो गया |
छौंक लगाना है तो जितना घी-तेल डालते है उससे दुगना पानी डालें और जरागरम हो डाल दो | जलना नहीं चाहिये मिर्च-मसाला, नहीं तो उसकी गंध,विटामिन उड़ जाती है |

Right use of kitchen spices
All women apply chaunk in the kitchen by putting spices in oil or ghee heated upto 100-150-250 degrees. That turns the oil-ghee poisonous and the used spices become useless as they have all lost their vitamins.
For correct use, put twice the
quantity of water as the amount of oil or ghee in pan and then put in
the spices once the mixture is warm. One must never burn the spices,
else its flavour and vitamins all vapourise away.
